Honey, is a sugar. Sugar does not like direct heat. It tends to burn quickly, so the name of the game here is indirect cooking. A two-zone grilling setup (coals on one side, food on the other) will ensure the wings render a crispy, golden brown skin and not burn.
You’re probably thinking, hey — that’s kinda like how an oven works! You are correct. You can bake these instead, at the same target temperature and time
Ingredients
-
3-5 pounds of chicken wings, whole or cut into flats and drumettes
-
Morning Buzz Hot Honey Rub
-
1 stick unsalted butter (optionally clarified)
-
¼ cup honey
-
¼ cup hot sauce, like Choula
-
Chives, for topping
Directions
With paper towels, pat the wings dry.
Generously season dry wings with Morning Buzz.
Over indirect heat, place the seasoned wings on the grill and cook for 45 minutes at 400°F. Check for hot spots and move wings around if some are not cooking predictably. Flip wings halfway through and pull when skin is a crisp, golden brown.
While the wings are cooking, melt the butter in a medium saucepan over medium-low heat. Whisk in hot sauce, honey and 1 teaspoon of Morning Buzz. Reduce sauce for about 5 minutes on low heat. Set aside.
When the wings are finished cooking, place them in a large mixing bowl and toss with the hot honey sauce.
Serve immediately with chives sprinkled on top.
